This one goes out to all my bakers! As most of you may know, I have a HUGE sweet tooth and chocolate makes my heart happy. However, as I've learned about the detrimental effects of refined sugars, butter, and processed foods, I've been on a mission to figure out how I can enjoy sweets without the consequences. Queue healthy baking! Over the last 3 years, I've created and discovered recipes that use unrefined and whole foods that often taste even better than the traditional versions. This brownie recipe is my all-star. Secret ingredient -- zucchinis! Imagine a world in which you can eat sweets and get in your serving of veggies. Ingredients

  • 1 medium zucchini shredded (about 1 cup)
  • 1 egg
  • 1/2 cup almond butter
  • 1/4 maple syrup
  • 1/2 cup Paal Coconut Sugar
  • 2 tsp vanilla extract
  • 1/2 cup raw cacao powder
  • 2 tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp melted and cooled coconut oil
  • 1/3 cup dark chocolate chips
  • (optional) 1/2 cup chopped walnuts

Instructions

  1. Preheat over to 350 degrees. Grease and line a square 8x8 in baking pan with parchment paper.
  2. Shred zucchini and squeeze with paper towel to absorb water. Make sure to remove all excess moisture.
  3. In a medium mixing bowl, combine egg, almond butter, maple syrup, coconut sugar, and vanilla. Gently sift in cacao powder until well incorporated.
  4. Add coconut flour, baking soda, and salt and gently stir. Add room temperature coconut oil until well combined.
  5. Fold in chocolate chips and walnuts (optional).
  6. Pour into baking pan and bake for 30-35 minutes (or until toothpick comes out with just a few crumbs).
  7. Allow brownies to cool completely for ~30 mins.
Chocolate Drizzle (optional)
  1. Add 3 tbsp of chocolate chips and coconut oil over double boiler. Whisk until chocolate is silky and well incorporated with coconut oil.
  2. Drizzle over brownies and add sprinkle with sea salt.
  3. Enjoy!
