One of my favorite treats during the holiday season is a classic hot chocolate. Over the years, as I began experimenting with coconut sugar, I developed my own super easy recipe that's vegan, nutrient-dense, refined sugar-free, and honestly tastes better than the traditional version. Paal Coconut Sugar is the perfect compliment to the cacao and dark chocolate, while adding just the right amount of sweetness - you won't even be able to tell the difference. For some extra indulgence, you can easily transform this into a boozy hot chocolate with a simple add (see below)!
Ingredients
- 3 cups plant-based milk - I prefer coconut milk (obviously) but oat or almond milk work just as well
- 1.5 tablespoons raw cacao powder
- 1/4 cup of dark chocolate
- 3 tablespoons of Paal Coconut Sugar (or more according to your taste)
- 3/4 cup Kahlúa (optional)
- Coconut whipped cream (optional)
Instructions
- Add plant-based milk to a medium saucepan and bring to a boil.
- Once milk has boiled, reduce to medium heat and stir in raw cacao. Whisk continuously for ~3 minutes to prevent clumping and burning.
- Add dark chocolate and continue stirring slowly with whisk to incorporate for ~2-3 minutes. At this point, the liquid should start to thicken and develop a deep brown color.
- Stir in Paal coconut sugar. (Add more depending on desired sweetness)
- (optional) Turn down heat to medium/low. Add Kahlúa and continue stirring for 2 minutes.
- Pour into mugs and serve with coconut whipped cream.
